Snow White was my first favorite princess. As soon as I saw the movie, I I loved it and would spend hours playing with my figures of Snow White and the dwarfs and wearing the Snow White dress my mom gave me. Not only was Snow White a favorite of mine, but the characters and songs from the movie made their way into my family’s everyday life. As such, anytime I see something Snow White themed, it brings back a lot of fond memories.

When Disney announced they were expanding Fantasyland in Disney World and making a ride based on the seven dwarfs, I was immediately intrigued. Although Snow White’s Scary Adventures was a classic ride, I was excited to see that an older movie and a favorite princess was being reimagined and carried into the future.

To celebrate my love of Snow White and the Seven Dwarfs, I’m excited to share these soft and chewy chocolate cookies filled with gems found in the dwarfs’ mine!

For these cookies, I started with a dark chocolate batter to mirror the darkness of the mine. I really wanted a cookie that would contrast the colorful gems and so aimed for a chocolate base instead of a more traditional chocolate chip cookie base.

For the gems, I used a mix of red, blue, green, and yellow regular size m&ms to create the illusion of sparkling gemstones. Since the cookie has a lot of dark chocolate flavor, and to add some diamonds into the mix, I also added white chocolate chips.

Since the m&ms and white chocolate chips all get mixed up in the batter, they’re not always immediately visible on the tops of the cookies once they have been baked. To make sure some gems shine through, I added a couple m&ms and white chocolate chips to the tops of the spoonfuls of dough just before baking them.
