Happy Friday! I always love how bright and colorful rainbows are and since June is Pride Month, I wanted to celebrate the vibrancy of the LGBTQIA+ community with these Rainbow Mickey Krispies! Made with Fruity Pebbles cereal and melted marshmallows, these colorful krispies are a super fun and magical treat!
I always love making rice krispies as they’re quick and easy to make. I also love how versatile they are since you can use a variety of cereals. To make these Rainbow Mickey Krispies, I used Fruity Pebbles. The resulting krispies have a perfect rainbow mix and a slightly fruity flavor. If you don’t like Fruity Pebbles, other rainbow cereal options include Fruit Loops or Trix!
To start, spray a baking sheet with cooking spray. Set it aside until after you’ve made the krispies mixture. Then, melt the butter in a large pot. Add the marshmallows, stirring until completely melted. Remove the marshmallow mixture from the heat and stir in the Fruity Pebbles. Stir until the cereal is well coated with the marshmallow mixture. Transfer the mixture to the prepared baking sheet. Using a spatula, press the krispies into the baking sheet and let cool to room temperature.
Once the krispies are cool to the touch, cut them out using Mickey shaped cookie cutter. For these krispies, I used the large Mickey Mouse cookie cutter from a set I got from ShopDisney. I think the set is sold out online, but there are some other good options available on Amazon.

- 3 tablespoons butter
- 12 oz regular size marshmallows
- 6 cups Fruity Pebbles cereal

Instructions

Spray a 9×13 baking sheet with cooking spray. Set aside.

In a large pot, melt butter over low heat. Once butter has melted, add marshmallows and stir until completely melted. Remove from heat.

Add the Fruity Pebbles cereal to the marshmallow mixture. Stir until well coated (it helps to coat spatula in a little bit of cooking spray).

Using a spatula, press mixture into prepared baking sheet. Let cool until the krispies reach room temperature.

Spray the cookie cutter with cooking spray and cut out the krispies.
