Happy Friday! This week, Zootopia celebrated its 5th anniversary! I remember seeing Zootopia when it came out in theaters and loved seeing a world built for animals where they could go about daily human-like life. It was so fun to see familiar stores, brands, and products adapted for animals and I loved the movie’s story and message. And so, I wanted to make something special to celebrate! Since I’ve already shared a recipe for the frozen Pawpsicles, I took inspiration from the movie’s main character Judy Hopps. Inspired by Officer Hopps’ special carrot pen, these bright orange carrot shaped rice krispies are topped with green fondant leaves. While they may not help you secretly record a conversation, they’re a super fun and tasty treat!

Overall, these rice krispies are easy to make as they come together quickly on the stove. The trickiest bits are shaping the carrot top fondant leaves. To make the krispies carrot shaped, I used disposable piping bags. Using the piping bags made it easy as you just need to scoop some of the rice krispie mixture into the bag and press it together to form the shape.
To start, spray six piping bags with cooking spray. This will make it easy the krispies from the bags after they’ve cooled. Next, melt the butter in a large saucepan over low heat. Once the butter has melted, add the marshmallows and stir until they’re completely melted. Add a few drops of orange gel food coloring and stir until completely incorporated. For these treats, I used Americolor’s orange gel food coloring.
Remove the marshmallow mixture from the heat and add the rice krispies cereal. Using a spatula, stir the mixture until the cereal is completely covered by the marshmallow. If you find the marshmallow is sticking to your spatula, you can spray the spatula with a little bit of cooking spray. When the mixture is fully combined, place 1-2 scoopfuls of mixture into each piping bag. Use your hands to press and shape the mixture in the bag so that they form a carrot shape. Let cool until the krispies reach room temperature. Remove the carrot krispies from the piping bags and place on a plate or surface covered with wax or parchment paper.
While the krispies are cooling, prepare the carrot top decorations. To make the carrot krispies look more like Officer Hopps’ pen and less like a real carrot, I decided to use green fondant to make the leaves. To shape the leaves, cut out a small piece fondant, about 1/2-inch. Then, roll the piece of fondant into a log. Repeat this step with a second piece of fondant. Next, press the two pieces of fondant together to make a stem with two leaves. If needed, use a dab of water to attach the leaves together. Press a toothpick into the bottom of the stem. Repeat this process until you have enough leaves for each carrot krispie. To assemble carrots, just press the toothpick with the leaves into the top of each carrot krispie.
Once assembled, grab one and enjoy!

Officer Hopps’ Carrot Pen Rice Krispies
Ingredients
Rice Krispies
- 3 tablespoons butter
- 12 oz regular size marshmallows
- 6 cups Rice Krispies cereal
- orange gel food coloring
Carrot Top Decoration
- 4 oz green fondant
- toothpicks
Equipment
- 6 disposable piping bags
Instructions

Spray the inside of each piping bag with cooking spray. Set aside.

In a large pot, melt butter over low heat. Once butter has melted, add marshmallows and stir until completely melted. Add a few drops of orange food color and stir until fully incorporated. Remove the mixture from the heat.

Add the rice krispies cereal to the marshmallow mixture. Stir until the cereal is well coated (it helps to coat spatula in a little bit of cooking spray).

Using a spatula, scoop 1-2 spoonfuls of rice krispies mixture into each piping bag. Use your hands to press and shape the rice krispies into the bag so that they form a carrot shape. Let cool until krispies reach room temperature.

Once cooled, remove the krispies from the piping bags and place on a wax paper lined work surface.
Carrot Top Decoration

While the rice krispies are cooling, take a small amount of green fondant, about a 1/2-inch piece, and roll it into a log. Take a second piece of green fondant and roll into a second log.

Press the two pieces of fondant together to make a shape that looks like leaves on the top of a carrot. If needed, use a dab of water to adhere the pieces together.

Press a toothpick into the bottom of the fondant leaves, leaving room so that the rest of the toothpick can be inserted into the carrot krispies.

Repeat steps 1-3 until you have leaves for each carrot krispie.

Gently press one set of leaves into the top of each carrot krispie.
