Happy Friday! Valentine’s Day is just around the corner and I’m getting ready with Mickey’s Valentine Cookies! These heart shaped shortbread cookies have a layer of white chocolate and raspberry jam and a cut out Mickey!
These cookies are actually adapted from one of my favorite Christmas cookies, Mickey Mouse Linzer Cookies, but with a few twists, they’re perfect for Valentine’s Day!

These cookies have three parts – the cookie base, a layer of white chocolate, and a layer or raspberry jam. To make the cookie dough, combine flour and salt in a small bowl.
In a large bowl, beat the butter until smooth. Add the sugar and vanilla and beat until combined. Gradually add the flour mixture to the butter mixture, beating just until combined.
Divide the dough in half and roll out each half between two sheets of parchment paper until about ⅛ inch thick. Wrap the dough in the parchment paper, place on a baking sheet, and place in the refrigerator until firm, about 30 minutes.
Remove dough from the refrigerator and place on a flat surface. Remove the top piece of parchment paper. Using a medium to large heart shaped cookie cutter, cut out the cookies.
Using a small Mickey Mouse shaped cutter or round piping tips, cut out a Mickey head shape in half of the cookies (these will be the top cookies in the sandwich). Transfer the cut out cookies to a parchment lined baking sheet and place in the refrigerator for 15 minutes.
Bake the cookies at 350 F for 10 minutes or until the edges are lightly browned. Let the cookies cool on the pan for a couple minutes before carefully transferring to a wire rack to cool completely.
Once the cookies have cooled, melt the white chocolate in a double boiler or in a microwave safe bowl in the microwave, stirring every 30 seconds. I used a bar of Ghirardelli’s white chocolate, but you could also use white chocolate chips or white candy melts.
Using a small spatula, spread a thin layer of chocolate on the bottom cookies (without the cut out Mickey). Let the chocolate set while warming the jam in the microwave. The jam should be easy to spread but not liquid. If you’re starting with room temperature jam, this step might not be necessary. I prefer seedless raspberry jam but you can use whatever jam you prefer!
Using a small spatula, spread the jam on top of the white chocolate. Be careful not to overfill the cookies. Carefully place the top cookies onto the bottom cookies.

- 2 cups all-purpose flour
- ¼ teaspoon salt
- 1 cup butter, softened

- ½ cup raspberry jam
- 2 ounces white chocolate, broken into pieces
Equipment
- 1 medium to large heart shaped cookie cutter
- 1 small Mickey shaped cookie cutter or 1 large round piping tip and 1 medium round piping tip
Instructions

While the cookies are chilling, preheat the oven to 350 F.

Bake the cookies for 10 minutes or until the edges are lightly browned.

Let cool on the pan for a couple minutes before carefully transferring to a wire rack to cool completely.
Filling

Once the cookies have cooled, melt the white chocolate in a double boiler or in a microwave safe bowl in the microwave. Make sure to check and stir frequently.

Using a small spatula, spread a thin layer of chocolate on the bottom cookies (without the cut out Mickey).

Let set while warming the jam in the microwave. The jam should be easy to spread but not liquid. If starting with room temperature jam, this step might not be necessary.

Using a small spatula, spread the jam on top of the white chocolate. Be careful not to overfill the cookies.
Assembly

Carefully place the top cookies onto the bottom cookies. These cookies are best enjoyed within a few days of being assembled.
