Happy Friday! With St. Patrick’s Day right around the corner, and Girl Scout Cookies at hand, I’m excited to share Mickey’s Shamrock Blizzard! Packed with Thin Mint cookies and chocolate chips, Mickey’s Shamrock Blizzard is a delicious mint ice cream treat. And perfectly green for St. Patrick’s Day!

I’d seen a lot of videos about a hack to make Dairy Queen style Blizzard’s at home using a Kitchen Aid mixer and I felt like that would be fun to try. My favorite Blizzard is a cookies and cream (vanilla with Oreos) but since it’s prime time for Girl Scout Cookies, I thought I’d use Thin Mints instead! Of course the Shamrock Shake is another classic St. Patrick’s Day treat and so I combined the two to make this mint chip blizzard.

Mickey’s Shamrock Blizzard comes together quickly. First, chill the bowl of your stand mixer in the freezer for 10 minutes. This will help keep the ice cream cold while you’re mixing in the cookies. Once chilled, return the bowl to the mix and add in the mint chip ice cream and a few drops of green gel food coloring. I used a quart of mint chip ice cream from Trader Joe’s, which is a white ice cream. If you have green mint chip ice cream, you might not need the food coloring!

Mix the ice cream on medium speed for about one minute, until smooth. Save 8 of the Thin Mint cookies to decorate the blizzards, but break the rest of the cookies in half and add them to the ice cream. Mix until the cookies are crushed and combined.

Transfer the ice cream to the serving bowls and add two cookies to each bowl to make Mickey ears! Enjoy Mickey’s Shamrock Blizzard! Happy St. Patrick’s Day!

  • 1 quart mint chip ice cream
  • 1 package Thin Mint cookies (reserve 8 for decoration)
  • green gel food coloring

Instructions

Mickey’s Shamrock Blizzard

  1. Place bowl of a stand mixer in the freezer for 10 minutes.
  2. Return the bowl to the mixer and add the ice cream and a few drops of the green gel food coloring. Mix on medium speed for about 1 minute, until smooth.
  3. Reserve 8 cookies for decoration. Break the rest of the cookies in half and them to the ice cream. Mix until crushed and combined.
  4. Transfer the ice cream to serving bowls and add two cookies to each bowl to make Mickey ears.
