Happy Fourth of July! I’ve teamed up with some friends for a special Fourth of July Disney Food Showcase and as part of that, I’m excited to share Mickey’s Red, White, and Blueberry Shortcake! These sweet Mickey shaped shortcake biscuits are topped with fresh strawberries, blueberries, and whipped cream. Perfect for Fourth of July!

Strawberry shortcake is a dessert I usually associate with the Fourth of July as it’s a light dessert that is perfect for those hot July days. To make it a bit more patriotic, I added fresh blueberries so that there are red, white, and blue elements. Of course, I couldn’t resist adding a Disney twist and so the shortcake itself is Mickey shaped.

To make these shortcakes, start by preparing the fruit. Combine the fresh strawberries and blueberries in a medium bowl with 1-2 tablespoons of sugar. The sugar is to help the berries break down and little bit and add a little sweetness, so you can adjust the amount of sugar depending on how sweet or tart your berries are. Cover the bowl and place in the refrigerator until ready to serve.

Next, make the shortcake biscuits by combining the flour, sugar, baking powder, and salt in the bowl of a food processor. Add the butter and pulse until coarse crumbs form. Transfer to a medium bowl. Add the buttermilk and stir to combine. The dough will be very crumbly. Transfer it to a clean work surface and, using your hands, gently flatten the dough until its about 1/2 inch thick. Use a Mickey shaped cookie cutter to cut the dough into shapes. Re-roll the scraps as needed. For these, I used biscuit cutters from ShopDisney. They’ve been going in and out of stock the past few weeks, but there are also a lot of good options on Amazon.

Place the cut-out shortcake biscuits on a baking sheet lined with parchment paper. Brush the tops of the biscuits with buttermilk and then sprinkle with coarse or sparkling sugar. Bake for 12-15 minutes or until the biscuits are golden brown. Cool for 10 minutes.

While the biscuits are cooling, make the whipped cream but combining the heavy cream, sugar, and vanilla in a medium bowl. Beat on medium-high speed until it reaches soft peaks.

To assemble the shortcakes, place a biscuit on a plate. Add a scoop of whipped cream and a scoop or two of the berry mixture. Enjoy!

Ingredients

Berries

  • 1 pint fresh blueberries
  • 16 oz fresh strawberries, sliced
  • 1-2 tablespoons granulated sugar

Sweet Whipped Cream

  • 1 cup heavy cream
  • ½ teaspoon vanilla extract
  • 1 tablespoon granulated sugar

Shortcake Biscuits

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into 1-inch pieces
  • 1/2 cup buttermilk
  • 1 tablespoons buttermilk, for topping
  • coarse or sparkling sugar, for topping

  • food processor

Instructions

Berries

  1. Combine the blueberries and strawberries in a small bowl and gently stir in the sugar.
  2. Cover and place in the refrigerator until ready to use.

Shortcake Biscuits

  1. Preheat the oven to 425 F. Line a baking sheet with parchment paper and set aside.
  2. In the bowl of a food processor, mix the flour, sugar, baking powder, and salt together. Add the butter and pulse until coarse crumbs form and then transfer to a medium bowl.
  3. Add the buttermilk and stir to combine. The dough will be very crumbly. Transfer to a clean work surface and, using your hands, gently flatten until the dough is about ½ inch thick. Cut into Mickey shapes using a Mickey Mouse cookie cutter. Re-roll scraps if needed.
  4. Place biscuits onto the prepared baking sheet. Brush the tops of the biscuits with buttermilk and sprinkle with sugar.
  5. Bake for 12-15 minutes or until golden brown. Cool for 10 minutes.

Whipped Cream

  1. In a medium bowl, combine the heavy cream, sugar, and vanilla.
  2. Beat on medium-high speed until the cream reaches soft peaks.

Assembly

  1. Place one of the shortcake biscuits on a plate. Add a scoop of whipped cream and a scoop of berries.
