Happy Friday! With the start of December, it’s beginning to feel a lot like Christmas! And after picking up my Christmas tree this week, I was inspired to make Mickey’s Mini Krispie Trees! Similar to the ones aboard the Disney Fantasy, these cute mini rice krispie trees have a peanut butter cup trunk and fun holiday sprinkle ornaments!

While I was aboard the Disney Fantasy, I stopped by Sweet On You Ice Cream and Sweets. It’s such a fun shop with a great ice cream selection and super cute Disney treats. One of the things that stood out to me were the rice krispie trees and, since I love rice krispies, I wanted to recreate them at home.
These trees are easy to make, as it’s just a twist on classic rice krispie treats. To make the tree shape, I used disposable piping bags. I measured 4 1/2 inches from the top of the piping and then cut the bag to make a small triangle shape. Repeat until you have the desired amount of bags. Spray the inside of each bag with cooking spray and set aside.
To make the rice krispies, melt the butter in a large pot over low heat. Add the marshmallows, stirring until melted. Add desired amount of green gel food coloring. For these, I used the green from Wilton’s primary color set. Stir until the color is fully incorporated and then remove the mixture from the heat. Add the rice krispies and mix until they’re fully coated with marshmallow.
Wearing clean food safe gloves coated with cooking spray, press the rice krispie mixture into the prepared piping bags. Re-shape them with your hands as needed. Let cool to room temperature.
Once cool, remove the rice krispie trees from the piping bags and place on a wax paper lined surface. Unwrap the mini Reese’s peanut butter cups and place them top side down on a wax paper lined surface.
Place a spoonful or so of the chocolate candy melts into a disposable piping bag and melt in the microwave, checking every 30 seconds. Pipe a small amount of chocolate onto a peanut butter cup and then gently press a rice krispie tree on top of the peanut butter cup to make the trunk. Repeat with remaining trees and peanut butter cups.
To add decorations, place a spoonful or so of the white candy melts into a disposable piping bag and melt in the microwave, checking every 30 seconds.
Pipe a small amount of the candy melt onto desired holiday sprinkles and gently press onto the sides of the trees. For these, I used a holiday sprinkle mix from Target and some Mickey sprinkles from Wilton. Let the trees set before eating.

Mickey’s Mini Krispie Trees
Ingredients
Rice Krispies
- 3 tablespoons butter
- 12 oz regular size marshmallows
- 6 cups Rice Krispies cereal
- green gel food coloring
Decorations
- mini Reese’s Peanut Butter Cups
- holiday sprinkles
- chocolate candy melts
- white candy melts

- disposable food safe gloves

Instructions
Rice Krispies

Starting at the tip of the piping bag, measure 4 ½ inches. Cut the bag at the 4 ½ inch mark. Repeat with remaining piping bags. Spray the inside of each piping bag with cooking spray. Set aside.

In a large pot, melt butter over low heat. Once butter has melted, add marshmallows and stir until completely melted. Add a few drops of green food color and stir until fully incorporated. Remove the mixture from the heat.

Add the rice krispies cereal to the marshmallow mixture. Stir until the cereal is well coated (it helps to coat spatula in a little bit of cooking spray).

Using food safe gloves coated with cooking spray, press a small handful of the rice krispies mixture into each prepared piping bag. Use your hands to press and shape the rice krispies into the bag so that they form a tree shape. Let cool until the krispies reach room temperature.

Once cooled, remove the krispies from the piping bags and place on a wax paper lined work surface.
Assembly

Unwrap 20 of the mini Reese’s Peanut Butter Cups. Place the peanut butter cups top side down on a wax paper lined surface. Set aside.

Place a spoonful of chocolate candy melts into a disposable piping bag. Melt the candy melts in the microwave, checking every 30 seconds.

Pipe a small amount of chocolate onto a peanut butter cup. Gently press a rice krispie tree onto the peanut butter cup. Repeat with remaining peanut butter cups and trees.

Place a couple spoonfuls of white candy melts into a disposable piping bag. Melt the candy melts in the microwave, checking every 30 seconds.

Pipe a small amount of white candy melt onto desired sprinkles and gently press them onto the krispie trees.
