Happy Friday! Tomorrow is National Muffin Day and I couldn’t resist making a batch of my favorite muffins to celebrate! Packed with fresh blueberries, Mickey’s Magical Blueberry Muffins are the perfect breakfast or afternoon snack. These light and fluffy muffins have a delicious streusel topping and, of course, a hidden Mickey!

Blueberry muffins are some of my favorite muffins as I love the mix of tangy blueberries and sweet, fluffy cake. While a lot of blueberry muffins have a coarse sugar topping, I really love when they have a streusel topping. When making these muffins, I’d recommend starting with the streusel topping so that it’s ready when you finish the batter and are ready to bake them.

To make the streusel topping, combine the flour, sugar, salt, and melted butter in a small bowl. Stir together until the mixture is well combined and there are small and medium chunks. Set aside while you make the batter.

For this recipe, you don’t actually need a mixer or hand mixers. Everything can be done with a whisk and a spatula. Start by whisking together the flour, sugar, baking powder, and salt in a medium bowl. In a separate bowl, whisk together the egg, sour cream, milk, and vanilla.

Add the egg mixture to the flour mixture and stir until smooth. Pour in the melted butter and stir until combined. Next, fold in the blueberries into the batter. Once combined, divide the batter among the muffin cups, filling them to the top. Sprinkle a generous amount of the streusel topping on each muffin.

Bake the muffins for 15 minutes at 375 F. After 15 minutes, remove the muffins and gently press three blueberries into the top of each muffin to make a Mickey Mouse design. Bake the muffins for another 13 minutes until they’re golden brown and a toothpick inserted in the center of the muffin comes out clean.

Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Ingredients

Blueberry Muffins

  • 1 ¼ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg

  • 6 tablespoons unsalted butter, melted
  • 1 cup fresh blueberries, plus extra for decorating

Streusel Topping

  • 6 tablespoons all-purpose flour
  • 6 tablespoons granulated sugar
  • ¼ teaspoon salt
  • 3 tablespoons unsalted butter, melted

Instructions

Streusel Topping

  1. In a small bowl, combine the flour, sugar, salt, and butter.
  2. Stir together until the mixture is well combined and there are small to medium sized chunks. Set aside.

  1. Preheat the oven to 375 F. Line the muffin pan with cupcake wrappers. Set aside.
  2. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the egg, sour cream, milk, and vanilla.
  4. Add the egg mixture to the flour mixture and stir until smooth. Add the butter and stir until combined. Fold the blueberries into the batter.
  5. Divide batter among muffin cups, filling them to the top.
  6. Sprinkle a generous amount of streusel topping on each muffin.
  7. Bake the muffins for 15 minutes. Remove from the oven and gently press three blueberries into the top of each muffin to make a Mickey Mouse design. Bake muffins for another 13 minutes until golden brown and a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
