Happy Pride Month! Today (and every day) I’m celebrating my friends in the LGBTQIA+ community. These Mickey Pride Krispies are a fun twist on the classic Mickey Krispies. Made with Trix Minis, these super colorful Mickey Krispies are the perfect treat!
Mickey Krispies are my favorite park treat (especially when they’re chocolate covered), but this version with Trix Minis is a close second! I have a strong nostalgia for Trix and I’m happy that it’s one food from childhood that still tastes just as good to me as an adult. The mini size is also perfect for Krispies!
Like most Rice Krispies, these Mickey Pride Krispies are super easy to make! First, melt the butter in a large saucepan over low heat. I like to use one that is shallow but has an edge to help keep everything together. Add the marshmallows and stir until they’ve melted. Typically, I’ll use regular size marshmallows, but you can also use other versions, such as mini marshmallows or the flat s’mores marshmallows. Finally, add the Trix Minis cereal and use a spatula coated with cooking spray to combine the cereal and marshmallow mixture.
Transfer the Krispies mixture to a greased 9×13 inch pan or baking sheet. For my Krispies, I used the baking slab from Made In, but I’ve also used glass casserole dishes and rimmed baking sheets. All work great!
Press the mixture into the pan, soothing the top with a greased spatula. Let the Krispies cool in the pan until they are room temperature. Then, use a greased Mickey Mouse shaped cookie cutter to cut the Krispies into Mickey shapes. I used a large size Mickey shaped biscuit cutter for mine, but there are plenty of options available on Amazon.
Enjoy these Mickey Pride Krispies! Happy Pride!
