It’s almost Halloween! Since Halloween falls on a weekday this year, we donned our costumes and decided to celebrate this weekend. Of course, no Halloween party is complete without some spooky treats so I made a batch of these not-so-scary Mickey Mummy Cupcakes!

I saw these adorable cupcakes on Disney Family a few years ago and since the mummy wrappings are made out of marshmallow, I knew that my recipe for chocolate cupcakes with marshmallow frosting would be the perfect fit. The cupcakes themselves are easy to make, just plan for a little extra time to decorate.

To make the mummy wrappings, I used regular size marshmallows that I flattened with a rolling pin and then cut into strips. The hardest part was putting a strip diagonally across the cupcake. I found the best way to get that strip to stick is to dab it in a little bit of frosting. For Mickey’s eyes, I used dark chocolate covered raisins, and for the ears I used mini oreo cookies, though you could also use any kind of round chocolate pieces.

These cupcakes are best when chilled, so keep them in the fridge until you’re ready to serve.

Mickey Mummy Cupcakes

These adorable mummies are a spooktacular Halloween treat!

Ingredients

Chocolate Cupcakes

  • 2 cups granulated sugar
  • 1 ¾ cup flour
  • ¾ cup cocoa powder
  • 1 ½ teaspoon baking powder
  • 1 ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Marshmallow Frosting

  • 1 ¼ cup unsalted butter, softened
  • 1 jar (7.5 oz) marshmallow fluff or creme
  • 2 cups powdered sugar
  • 1 teaspoon vanilla

Decorations

  • chocolate covered raisins
  • 1 bag marshmallows
  • mini oreo cookies

Instructions

Cupcakes

  1. Preheat oven to 350 F. Line muffin pan with cupcake liners.
  2. In a large bowl, combine sugar, flour, cocoa powder, baking soda, and baking powder.
  3. Add in eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes.
  4. Stir in boiling water (batter will be thin and runny).
  5. Pour into prepared muffin pan.
  6. Bake 15 minutes or until toothpick inserted in center comes out clean.
  7. Cool 5 minutes in the pan before transferring to a cooling rack.
  8. Cool cupcakes completely before frosting.

Frosting

  1. On medium speed, beat butter until light and fluffy, about 2 minutes.
  2. Add in marshmallow fluff and beat on low speed until just combined, about 30 seconds.
  3. Gradually add in sugar and vanilla and beat on medium speed until fluffy. Make sure not to overbeat the frosting as it will become tough.

Decorations

  1. Place a sheet of wax paper on the counter and spread with a small amount of powdered sugar.
  2. Spread some powdered sugar onto rolling pin, and roll over marshmallows, one at time, until they are flat.
  3. Using a sharp knife, cut flattened marshmallows into strips.
  4. Using an icing spatula or butter knife, frost cooled cupcakes.
  5. Place two chocolate covered raisins on each cupcake for eyes.
  6. Carefully pull apart the mini oreos and place onto cupcakes, cookie side up, for ears.
  7. Lay marshmallow strips atop each cupcake to resemble a mummy.
  8. Refrigerate until ready to serve.
