Happy 90th Birthday Mickey Mouse!!
I know I’m a day early, but I will be heading out on a Disney Cruise (!!!) and unable to post later this week. For the third recipe during our Month of Mickey, we are celebrating Mickey’s 90th Birthday with this super fun confetti cake!
Mickey has meant so much to me throughout my life. He’s a constant reminder to be imaginative and creative, to be fun and playful, to be loving and kind, and to always believe in wonder and magic. Given all that he means to me, I couldn’t imagine not doing something special to celebrate and so I decided to make him a special birthday cake. Since this cake is less Mickey inspired and more in celebration of his birthday, I chose to make a colorful confetti cake with sprinkles, candles, and fun.
Keeping in theme with the rest of the cakes this month, this cake is in the shape of Mickey Mouse. To do this, I used two 6-inch cake pans, one 9-inch cake pan, and a 3-inch round cutter. To make the head, I stacked the 6-inch cakes on top of each other to make two layers. For the ears, I cut four 3-inch circles out of the 9-inch cake and stacked them on top of each other to make two layers and then placed them at the top of the 6-inch cakes.
Once the cakes are cooked and cooled completely, make sure to trim them so the tops are flat and the heights are the same. While you can make up some space with the frosting, the cakes themselves should be close to the same height so that the ears and head are level when they are stacked and placed next to each other.
For the cake, I used a white cake recipe and added multi-colored sprinkles to the batter. I prefer white cakes for confetti cakes because they’re lighter, fluffier, and the extra egg whites make the batter lighter in color, which really makes the colored sprinkles pop. For the frosting, I used a vanilla buttercream, again mixing in multi-colored sprinkles. To decorate the top, I added wax candles and piped a 90 with some black icing. Whether you’re celebrating Mickey’s birthday or your favorite Mickey’s fan, this cake is guaranteed to make them feel special!

Mickey Mouse Confetti Cake
Celebrate Mickey's 90th Birthday with this super fun confetti cake!
Ingredients
Confetti Cake
- 1 ⅔ cups all-purpose flour
- 1 cup sugar
- ¼ teaspoon baking soda
- 1 teaspoon baking powder
- ¾ cup unsalted butter, softened
- 3 egg whites
- 3 teaspoons vanilla extract
- ½ cup sour cream
- ½ cup milk
- ⅓ cup multi-colored sprinkles
- ¼ teaspoon salt
Confetti Frosting
- 4 cups powdered sugar
- 1 cup butter, softened
- 1 teaspoon vanilla extract
- 4 tablespoons milk
- ⅓ cup multi-colored sprinkles
Equipment
- 2 6-inch cake pans
- 1 9-inch cake pan
- 1 3-inch round cutter
Instructions
Confetti Cake

Preheat oven to 340 F. Grease and line pans with parchment paper.

In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, cream butter and add in sour cream, milk, vanilla, and eggs.

Add butter mixture into the flour mixture and mix until just combined.

Stir in the sprinkles.

Pour batter into pans, making sure to only fill halfway.

Bake for 25-30 minutes or until toothpick inserted comes out clean. Cool 5-10 minutes in the pan before transferring to wire racks.
Confetti Frosting

Beat butter until light and add in vanilla.

Gradually beat in powdered sugar, adding in the milk.

Beat until fluffy and stir in the sprinkles.
Assembly

Once cakes have cooled completely, trim tops so they are even and flat.

Using the 3-inch cutter, cut 4 circles out of the 9-inch cake.

Place one 6-inch cake onto a piece of parchment paper on top of a cutting board or plate. Frost the top of the cake and then place the second 6-inch cake on top of it. Frost both of these cakes, making sure the edges are smooth.

Place two of the 3-inch cakes at the top to make Mickey’s ears. Frost the tops, and place a second 3-inch cake on top of each ear. Frost both cakes completely. If the ears are not level with the head, either trim the cakes before frosting or add a bit of frosting to make up the difference.

Add candles and a birthday message if desired.
