Happy (early) Birthday Mickey! On Monday, Mickey celebrates his 91st birthday! We’re getting a jump start on the party with these special birthday cupcakes!
I was so excited to see Mickey and Minnie in their special birthday outfits last year. I loved the bright colors of the confetti on their outfits. It immediately reminded me of a birthday party and so I kept them in mind when making these cupcakes.
These delicious vanilla birthday cupcakes are filled with rainbow sprinkles, topped with a marshmallow frosting party hat and, of course, Mickey ears!

To make these cupcakes, I started with a classic vanilla cupcake. I generally prefer chocolate cupcakes but I thought the chocolate cupcake would show though the white polka dot wrapper. That being said, these vanilla cupcakes are equally delicious. If you do prefer chocolate though, you can totally do it. I would just recommend testing out doubling your cupcake liners or using some with foil on the inside.
To mirror the confetti on Mickey’s birthday outfit, I used rainbow polka dot cupcake liners. Even with the vanilla cake, it’s best to use two wrappers on each cupcake so that the rainbow dots can clearly be seen.
These birthday cupcakes are filled with rainbow sprinkles. An easy way to do this is to use an apple corer. After the cupcake has cooled, press the corer into the center of the cupcake. Pull up to remove it, and use a finger to gently press down anything remaining in the hole.
To decorate the cupcakes, first fill with a mixture of rainbow sprinkles and frosting using a piping bag. Then, pipe the white frosting onto the tops of the cupcakes using a large star tip. To add a bit of color, I dropped some rainbow sprinkles on top of the cupcakes. I used a grass piping tip to add a little bit of yellow frosting pom pom on top. For the final touch, I used mini Oreo cookies to add Mickey ears on the sides of the frosting.

Mickey Mouse Birthday Cupcakes
Ingredients
Birthday Cupcakes
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, soft
- 1 cup granulated sugar
- 1 egg
- 1 egg white
- 1 ½ teaspoons vanilla extract
- ½ cup milk
Frosting
- 1 ¼ cup unsalted butter, soft
- 1 jar (7.5 oz) marshmallow fluff or creme
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- yellow gel food coloring
- rainbow sprinkles
Decorations
- rainbow sprinkles
- mini oreo cookies
Instructions
Cupcakes

Preheat oven to 350 F. Line muffin pan with cupcake liners. Depending on how thick they are, use two cupcake liners in each cup.

In a bowl, combine flour, baking powder, and salt. Set aside.

In a medium bowl, beat butter and sugar together until light and fluffy, 2-3 minutes.

Add in egg, egg white, and vanilla; beat until blended.

On low speed, gradually beat in flour mixture, one third at a time, alternating with milk, beginning and ending with flour.

Divide batter among liners and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in the pan. Transfer to a wire rack to cool completely.

Once cupcakes are cooled completely, use an apple corer to cut a hole in the center of each cupcake. Press down the cake inside the hole. Set aside until ready to frost.
Frosting

On medium speed, beat butter until light and fluffy, about 2 minutes.

On low speed, beat in fluff until just combined, about 30 seconds.

Gradually beat in sugar and vanilla; beat on medium until fluffy.

Place about ⅓ cup of frosting into a small bowl. Stir in ⅓ cup of rainbow sprinkles. Transfer to a piping bag fitted with a large round tip.

Place about ¼ cup of frosting into a small bowl. Stir in a few drops of yellow food coloring. Transfer to a piping bag fitted with a grass tip.

Transfer remaining frosting to a piping bag fitted with a large star tip.
Assembly

Pipe the frosting with rainbow sprinkles into the center of each cupcake.

Frost the tops of the cupcakes using the frosting with the star tip. Pipe in a circle to create a party hat shape.

Add rainbow sprinkles to the tops of the cupcakes.

Using the yellow frosting, pipe a small amount on the top of the white frosting hat to make a pom pom.

Add two mini oreo cookies to each cupcake to make Mickey ears.
