Happy Friday! National S’mores Day was earlier this week and since s’mores are one of my favorite summer desserts, I got a little bit of help from Mickey and Minnie for this fun and easy s’mores bake! Made in a cast iron skillet, Mickey & Minnie’s Campfire S’mores Bake is a layer of fudgy chocolate brownies topped with toasted marshmallows, hot fudge, and graham crackers. Perfect served warm from the oven!
Since I was going for a camping theme (thanks to the adorable sleeping bags I picked up for my Mickey and Minnie Numios), I felt like using the cast iron skillet would be a fun twist on classic s’mores. For this recipe, I first made some fudgy skillet brownies and then topped them with marshmallows, hot fudge, and graham crackers. While these brownies come together quickly, you can also swap in your favorite store bought brownie mix.

To make the brownies, whisk together the butter, vanilla, sugar, cocoa powder, and salt until smooth. Add the eggs and whisk until well combined. Then, add in the flour, whisking until combined. Transfer the batter to a 10″ cast iron skillet, smoothing the top with a spatula. Bake for 35 minutes or until a toothpick inserted into the center comes out with moist crumbs. Remove the skillet from the oven.
Switch the oven to broil. Depending on how far away your oven rack is from the boiler, you may want to adjust it. Place the marshmallows on top of the brownie and then place the skillet under the broiler. Cook until the marshmallows are toasted, about 1-1 1/2 minutes. Make sure to watch them carefully so that the marshmallows don’t burn.
Remove the skillet from the oven and drizzle with warm hot fudge sauce. Crumble half of the graham crackers and sprinkle them over the top of the marshmallows. Break the rest of the graham crackers into small rectangular pieces and insert them into the marshmallows. Serve warm!

Chocolate Brownies
- 1 ½ sticks unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 ½ cups granulated sugar
- 1 cup unsweetened cocoa powder
- ¼ teaspoon salt
- 2 large eggs
- ½ cup all-purpose flour
Toppings
- 1 16 oz bag regular sized marshmallows
- ¼ cup hot fudge sauce, warmed
- 9 graham crackers

- 10 inch cast iron skillet
Instructions

Preheat the oven to 325 F.
