Happy Friday! It’s been a couple busy weeks and so I’m jumping back in with a super easy meal featuring some of my favorite things! I love a good grilled cheese sandwich and since everything is better Mickey shaped, I used my favorite Select Brands Mickey Mouse waffle maker to add some Disney magic to these sandwiches! These Mickey Grilled Cheese sandwiches use King’s Hawaiian rolls and a mix of cheddar and provolone cheeses. Paired with some Hawaiian Sun POG juice and Hawaiian Host chocolate covered macadamia nuts, it’s the perfect lunch!

To make Mickey Grilled Cheese, first cut the cheese slices into quarters. I like to use a combination of sharp cheddar and provolone cheeses. The mix has a nice cheesey taste while still having a good gooey cheese feeling. You can definitely use other kinds of cheese and even add some meat and other toppings too! I also made some with turkey, roast beef, and mustard.

Place two quarters of cheddar and provolone cheese into each Hawaiian roll. If you’re using any meat or condiments (mustard, mayo, etc.) add that in now too! While you’re prepping the sandwiches, let the waffle maker preheat.

Since these are mini sandwiches, I used the Mickey Mouse Double Flip Waffle Maker from Select Brands. They also have a new version with Mickey and Minnie Mouse! While this waffle maker is expensive, it’s totally worth it!

Once the waffle maker is hot, place three rolls into it (one to cover each of the Mickey faces). Close the waffle maker lid and let cook for a few minutes. Even though the waffle maker makes six waffles at a time, I recommend only using one side as the sandwiches are a little bulky and it’s easier to manage three at a time. When the bread is toasted and the cheese is melted, remove the sandwiches from the waffle maker and serve!

I know the traditional side for grilled cheese is tomato soup, but that is not my favorite so I served my sandwiches with a caesar salad. Taking some inspiration from the Hawaiian rolls, I also grabbed a can of Hawaiian Sun POG juice and a Hawaiian Host AlohaMacs cluster. Both of which are available online! These are some of my favorite snacks from my trip to Hawaii and it’s so nice to get them at home!

Made with Hawaiian rolls, cheddar, and provolone cheese, these Mickey Grilled Cheese are a quick and magical lunch!

  • 1 package King’s Hawaiian Rolls, sliced in half
  • 6 slices sharp cheddar cheese, cut into quarters
  • 6 slices provolone cheese, cut into quarters

Instructions

Mickey Grilled Cheese

  1. Preheat the waffle maker.
  2. Place two quarters of cheddar cheese and two quarters of provolone cheese into each roll.
  3. Place three sandwiches onto the hot waffle maker with one sandwich covering each Mickey face.
  4. Close the lid of the waffle maker and cook until the bread is toasted and the cheese is melted, 2-3 minutes.
  5. Remove sandwiches from the waffle maker and repeat with remaining sandwiches.
