Happy Friday! Tomorrow is Mickey Mouse’s 95th birthday and so I’m celebrating with these Marble Mickey Cookies! These jumbo Mickey shaped chocolate and vanilla cookies are a marbled mix of Mickey’s signature colors — black, red, and yellow!

It seems like only yesterday that we were celebrating Mickey’s 90th birthday! I’m not sure where all the time went. But I’m always glad for a day to celebrate Mickey and all of the magic, fun, and creativity he brings to the world.

When I was planning this week’s bake, I knew I wanted something colorful and classically Mickey. So these colorful cookies are a fun mix of Mickey’s favorite colors and chocolate and vanilla flavors.

To make these cookies, I started with a classic vanilla cookie dough and divided it into three portions. For the black color, I used black cocoa powder to give the dough both a rich color and a chocolate flavor. If you’d rather keep the cookies all vanilla flavored, you can just use some black gel food coloring.

To make the cookie dough, combine the flour, salt, and baking soda in a medium bowl. Then, in a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs and vanilla and beat until combined. Gradually add the flour mixture to the butter mixture and beat until well combined. A smooth dough will start to form.

Divide the dough into three portions. Mix a few drops of yellow gel food coloring into one portion, a few drops of red gel food coloring into the second portion, and the black cocoa powder into the third portion. For all of my colors, I used Ann Clark’s gel food coloring.

Place a piece of wax paper onto a flat work surface. Pinch off pieces of the different colored doughs and gently press them onto the wax paper next to each other to make a marble effect. Transfer the dough (with the wax paper) to a baking sheet. Place a second piece of wax paper over the top and chill in the refrigerator for 30 minutes.

Transfer the dough to a lightly floured surface and gently roll it out to ½ inch thickness. Use a Mickey Mouse cookie cutter to cut the cookies into Mickey shapes, getting a mix of different colors. If needed, press the leftover back together to create a new marble pattern and gently re-roll it. Place the cookies on parchment paper lined baking sheets and chill in the refrigerator for 15 minutes.

For these cookies, I used an old Mickey Mouse cookie cutter that I got in Disney World years ago. The cutter is large so it makes jumbo sized cookies but can be hard to find. You can use a smaller size Mickey Mouse cookie cutter, you’ll just end up with more cookies!

Bake the cookies at 350 F for 8-10 minutes or until the edges of the cookies are just starting to brown. Let the cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
