Happy Friday! As I dream about being back in Hawaii, I’m making do with the nice spring weather here and re-creating some of my favorite treats from the trip, including this Honey-Need-List Cocktail from ‘AMA’AMA at Disney’s Aulani Resort. This refreshing gin based cocktail has Hawaiian honey, fresh lime juice, and ginger beer!
At Aulani, ‘AMA’AMA offers a four course pre-fixe meal in a beautiful indoor/outdoor space overlooking the beach. We had an amazing dinner at ‘AMA’AMA and were lucky enough to be there for the sunset. In addition to the delicious food, which I doubt I could re-create, I had one of my favorite cocktails of the trip, the Honey-Need-List.

In recreating this cocktail, I first made a honey syrup. Since I had brought some honey back from Hawaii, I used the rainbow blossom honey from a set of Maika’i brand honey. I combined the honey with warm water in a 1:1 ratio to make a honey simple syrup. While it still had a strong honey flavor, it was liquid enough to easily mix into the cocktail. If you don’t have Hawaiian honey, definitely use regular honey or some local honey from your area. For the rest of the cocktail, I used fresh lime juice, Sipsmith London Dry Gin, and Fever Tree Ginger Beer.
To make the cocktail, first place some ice in a glass. I used a fun stemless martini glass. Next, add the gin, honey syrup, and lime juice. Stir to combine and then top the glass off with ginger beer. For my glass, it was about 4 ounces.

Ingredients

- 1 oz gin
- ½ oz honey syrup (see below)
- 1 oz fresh lime juice
- 4 oz ginger beer
- ice
Honey Syrup
- ¼ oz honey
- ¼ oz warm water
Instructions
