Happy Friday! Halloween is right around the corner, which means the Sanderson Sisters are ready to return! To cap off spooky season, I’m excited to share these Hocus Pocus Mousse Cauldrons. Inspired by Winifred’s potion, these cauldrons are filled with a rich chocolate mousse and topped with a spooky green whipped cream and sparkling sugar!

These mousse cauldrons are super easy to make as it’s just a combination of whipped cream and chocolate ganache. To make the mousse, start by placing the chopped chocolate in a heat-safe bowl. Then, place the cream in a small saucepan over medium heat, removing it just before it comes to a boil. Pour the cream over the chocolate and let it sit for three minutes. Then, gently stir the cream and the chocolate together until they’re completely mixed.

Set the chocolate ganache aside while you make the first batch of whipped cream. Pour the heavy cream into a stainless steel bowl. It helps if the bowl has been chilled in the refrigerator or freezer, but it doesn’t have to be. Use an electric beater to whip the cream on high speed until it holds stiff peaks. 

Gently fold the chocolate ganache into the whipped cream, mixing until fully incorporated. Transfer the mousse into a large piping bag. Keep in the refrigerator while you make the second batch of whipped cream. Repeat the same steps as before, but this time add a few drops of green gel food coloring to the cream when mixing. Transfer the green whipped cream to a large piping bag.

For these desserts, I used silicone cauldrons from Michaels, but you can use any kind of cauldron ramekins. To assemble them, first pipe the chocolate mousse into the cauldron, filling about 2/3 full. Then, pipe the green whipped cream on top of it. Finally, add a sprinkle of white sparkling sugar to create a bubble like topping.

Ingredients

Chocolate Mousse

  • 4 oz semi-sweet chocolate, chopped
  • ½ cup heavy cream
  • 1 cup heavy cream

Whipped Cream

  • 1 cup heavy cream
  • green gel food coloring

Equipment

  • piping bags
  • small or medium cauldrons
  • white sparkling sugar, for decoration

Instructions

Chocolate Mousse

  1. Place chopped chocolate into a heat-safe bowl. Place a stainless steel bowl into the freezer.
  2. Pour ½ cup of cream into a small pot. Heat cream on the stove, removing it just before it comes to a boil.
  3. Pour the cream over the chocolate and let it sit for three minutes or until chocolate is melted.
  4. Gently stir the cream and the chocolate until completely mixed.
  5. Remove the stainless steel bowl from the freezer and pour 1 cup cream into it. Using an electric beater, whip the cream on high speed until it holds stiff peaks.
  6. Gently fold the chocolate mixture into the whipped cream, mixing until fully incorporated.
  7. Transfer the mousse into a large piping bag.

Whipped Cream

  1. Place the heavy cream into a medium bowl. Beat the cream on medium high speed until it reaches soft peaks (It’s helpful to use a chilled bowl and beaters).
  2. Add a few drops of green gel food coloring and continue beating until the cream reaches stiff peaks and the color is fully incorporated.
  3. Transfer the whipped cream to a piping bag.

Assembly

  1. Pipe the chocolate mousse into the cauldrons.
  2. Pipe the whipped cream on top of the chocolate mousse to create a potion like topping. If desired, add some green sprinkles to the whipped cream topping.
