Happy Friday! St. Patrick’s Day is coming up and I’m getting ready with these Hidden Mickey Shamrock Brownies! These green cheesecake swirled brownies are cut into shamrock shapes and are decorated with a small chocolate Mickey!
I love a good combination of baked goods and these cheesecake brownies are perfect! To make things a little quicker, I used a favorite brownie mix for the brownies and just made the cheesecake topping. But, if you’d like to make your own brownies, you definitely can. For these brownies, I used Bob’s Red Mill Fudgy Brownie Mix. I had been wanting to try this mix for a while and I really loved it! It has a great chocolate flavor and I loved the chewy texture. I also really like the Ghirardelli Brownie Mixes but definitely use your favorite!
Start by preparing the brownies according to the instructions on the box. Pour the batter into a 9×13 inch baking pan that’s been greased and lined with parchment paper. Next, make the cheesecake topping by beating the cream cheese, sugar, vanilla extract, egg yolk, and a few drops of green food coloring together. Once the mixture is fully combined and the color is evenly distributed, place dollops of the it onto the top of the brownie batter.


To make the swirled pattern, dip a butter knife, held straight up vertically, into the batter and drag it across the pan from one side to the other. Repeat this process a few times in horizontal rows and then swap to vertical rows.
Bake the brownies at 350 F for 20-30 minutes until the edges are brown and the center is set. Remove the pan from the oven and let the brownies cool completely, about 30 minutes. Lift the brownies out of the pan using the parchment paper and place on a flat work surface.


Use a shamrock cookie cutter to cut out the brownies. Place a 6 dark chocolate melting wafters into a piping bag and heat in the microwave, checking every 30 seconds, until melted. Pipe a small Mickey Mouse shape onto the top of each shamrock. Let set for 15 minutes. Enjoy immediately or store in the refrigerator until ready to serve.

These Hidden Mickey Shamrock Brownies are cheesecake swirled brownies cut into shamrock shapes with a small chocolate Mickey decoration!
Ingredients
Swirled Cheesecake Brownies
- 1 box brownie mix (and corresponding ingredients)
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- green gel food coloring
Decoration
- 4-6 pieces dark chocolate melting wafers
Equipment
- 9×13 inch baking pan
- shamrock cookie cutter
- piping bag
Instructions
Swirled Cheesecake Brownies

Preheat the oven to 350 F. Line a 9×13 inch baking pan with parchment paper and spray with cooking spray.

Prepare the brownie mix according to the instructions on the package. Pour the batter into the prepared baking pan.

Combine the cream cheese, sugar, egg yolk, vanilla extract, and a few drops of the green gel food coloring in a medium bowl. Use a hand beater to beat the mixture until well combined and the color is evenly distributed.

Place dollops of the cheesecake mixture onto the top of the brownie batter.

Dip a butter knife, held straight up vertically, through the cheesecake dollops and drag the knife horizontally from one side of the pan to the other. Repeat this process in rows horizontally. Then repeat it in rows vertically.

Bake the brownies for 20-30 minutes or until the edges are brown and the center is set.

Remove the pan from the oven and let the brownies cool completely before cutting, about 30 minutes. Use a shamrock cookie cutter to cut the brownies into shamrock shapes.

Place the dark chocolate melting wafers into a piping bag. Heat in the microwave, checking ever 30 seconds, until melted. Pipe a small Mickey Mouse onto the top of each shamrock. Enjoy immediately or keep in the refrigerator until ready to serve!
