Happy Friday and Happy Pride Month! I’m celebrating Pride with these vibrant Hidden Mickey Pride Flag Cookies! Colorful layers of lemon cookie dough are stacked on top of each other to create a rainbow and, of course, feature a white chocolate hidden Mickey!

At a time when the LGBTQIA+ community is especially under attack, I feel its extra important to do things to recognize, celebrate, and support them. While these cookies are a small way to show support, I hope they bring a bit of light, fun, and joy to a community whose members have most definitely given those things to me.

The dough for these cookies is straightforward to make, but everything does take some extra time so plan accordingly! While you can definitely make them in a day, I actually made let the dough rest overnight and made them in two days. It was nice to break it up a bit!

For the dough, whisk together the flour, baking soda, and salt in a medium bowl. In a large bowl, combine the sugar and lemon zest and use your fingers to massage the zest into the sugar until it has the consistency of wet sand.

Next, add the butter to the sugar mixture and beat on medium speed until light and fluffy. Then add in the egg, egg yolk, and vanilla and mix until combined. Finally, gradually add in the flour mixture and beat on low speed until combined.

To make the rainbow pattern, divide the dough into six portions and place them into small bowls. Add a few drops of red gel food coloring to the first bowl and mix the color into the dough until its fully incorporated. Repeat with remaining colors. I used Ann Clark gel food coloring for this and absolutely loved how bright and vibrant the colors turned out!

Shape the dough pieces into small rectangles and wrap each one in a piece of plastic wrap. Place the dough pieces into the refrigerator to chill for 1 hour.

Remove the chilled dough pieces from the refrigerator. Place the purple dough in-between two pieces of parchment paper. Roll the dough out to a 9×5 inch rectangle. Place the purple dough on a piece of plastic wrap.

Repeat with the remaining dough pieces, going in reverse rainbow order (purple, blue, green, yellow, orange, red). Place each piece of rolled out dough on top of the last rolled out piece of dough.

Wrap the rest of the plastic wrap around the rainbow layered dough block and let chill for at least 3 hours (or overnight).

Once chilled, use a sharp knife to cut off the edges of rainbow dough block so that they’re straight. Cut ½ inch strips of dough along the 5-inch (shorter) side. Then, cut each strip in half (for larger cookies) or in thirds (for smaller cookies).

Place the cookies on a parchment lined baking sheet, about a ½ inch apart. Bake the cookies at 350 F for 10-12 minutes, or until the edges just begin to brown. Let the cookies cool on the baking sheets for 10 minutes before transferring the wire rack to cool completely.

While the cookies cool, place white candy melts in a piping bag and heat them in the microwave, manipulating the bag every 30 seconds, until melted.

Pipe a Mickey Mouse head onto the top corner of each cookie. Let the cookies set 15 minutes.
