Happy Friday! This week I finished the last of the RunDisney Virtual 5Ks. I’ve really liked this series. It’s been fun way to motivate myself to move more and I’m a little sad to see them come to an end. I don’t think I’m anywhere near ready for the more competitive RunDisney races, so I’m looking forward to seeing what next summer’s virtual series will be! This month’s race, the last in the theme park series, was Haunted Mansion themed. Haunted Mansion is one of my favorite rides and I’m excited to share this smoothie bowl inspired by the 999 happy haunts! This ghostly green smoothie is packed with spinach, mango, and pineapple and topped with yogurt ghosts.

When I make smoothies, I typically focus on fruit and end up somewhere in the strawberry-banana family. However, I wanted something a little different for my Haunted Mansion inspired smoothie and so I went a little bit of out my wheelhouse to make this ghostly green smoothie. The green color comes from fresh spinach, but the main flavor comes from banana, mango, and pineapple. The smoothie has a nice tropical flavor and I didn’t taste the spinach at all!

The most time consuming part of this recipe is the yogurt ghosts as they’ll need time to freeze. Since yogurt takes 6-7 hours to freeze, I recommend making these the night before. To make them, scoop plain or vanilla yogurt into a ghost mold. I used a silicone ghost mold from Celebrate It. After you’ve filled the molds, make sure to scrape any excess yogurt off of the top. Place the mold in the freezer and freeze until solid.

To make the smoothie, start by placing the fresh spinach and water in the blender. Make sure to fully pack the measuring cup when you’re measuring the spinach since the leaves are bulky. Blend the spinach and water together until its well-combined and there are no chunks. It should look like green water. Add the pineapple, mango, and banana and blend until smooth. Pour the smoothie into a bowl and place the frozen yogurt ghosts on top.

Ghostly Green Smoothie Bowl

Ingredients

Green Smoothie

  • 1 cup fresh spinach, tightly packed
  • 1 cup water
  • ½ cup frozen pineapple chunks
  • ½ cup frozen mango chunks
  • 1 banana

Yogurt Ghosts

  • 1 cup plain or vanilla yogurt

Equipment

  • blender
  • silicone ghost mold

Instructions

Yogurt Ghosts

  1. Scoop yogurt into silicone ghost mold, making sure to fill the mold completely. Scrape any excess yogurt off the top of the mold.
  2. Freeze for 6-7 hours or overnight.

Green Smoothie

  1. Add spinach and water to the blender. Blend until the mixture is well-combined and there are no chunks.
  2. Add the pineapple, mango, and banana. Blend until smooth and well-combined.

Assembly

  1. Pour the smoothie into bowls.
  2. Carefully remove the yogurt ghosts from the mold and place on top of the smoothie.
