Happy Friday! Wow, what a week! This week has felt long, tiring, and stressful. Most of the savory food I’ve made this week has been comfort food (shoutout to mashed potatoes) but in the sweet realm, my comfort food is chocolate. So for this week’s dessert, I decided to make some of my favorite brownies and add a just a little sprinkle of Fall flair. These delicious fudgy brownies are filled with chocolate chips and topped with a Nutella drizzle and Fall sprinkles. Of course, everything is better Mickey shaped so these brownies are shaped like my favorite mouse.

This brownie recipe is one of my favorites as the brownies are rich, fudgy, and packed with chocolate. I’ve done a couple variations of them, including with caramel bits and chocolate frosting, so if those sound good, definitely try them out!

These brownies are super easy to make. First, whisk together the cocoa powder, granulated sugar, and salt in a large bowl. Add the butter and whisk until combined. Then, whisk in the four, mixing just until combined and stir in the chocolate chips. For this version, I used regular sized semi-sweet chocolate chips but you can also use mini chocolate chips. Transfer the batter to an 8×11 inch glass baking dish and bake at 325 F for 25-30 minutes or until a toothpick inserted in the center comes out clean. Transfer the baking dish to a wire rack to cool completely.

Once the brownies have cooled, cut them into shapes using a small Mickey shaped cookie cutter. I found the easiest way to do this is to cut them in the glass baking dish and then transfer the cut brownies to a piece of wax paper.

Next, prepare the Nutella drizzle by placing the Nutella in a microwave-safe bowl. Heat in the microwave for about 30 seconds, just until it’s loose and easy to stir. Transfer the warm Nutella to a piping bag. You can drizzle the brownies using a spoon, but I found it easier to control when using a piping bag. Pipe the Nutella in lines across the tops of the brownies.

To decorate, sprinkle some Fall sprinkles onto the tops of the brownies. I used Wilton’s Autumn Sprinkle Mix for my decorations but you can use any kind of Fall themed sprinkles or really any color you would like.

Fall Mickey Brownies

These fudgy chocolate Mickey brownies are filled with chocolate chips and topped with a Nutella drizzle and Fall sprinkles!

Ingredients

Brownies

  • ½ cup unsalted butter, melted
  • 1 ¼ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • cup all-purpose flour
  • ½ cup semi-sweet chocolate chips

Decoration

  • ¼ cup nutella
  • sprinkles in fall colors and shapes

Equipment

  • small Mickey shaped cookie cutter

Instructions

Brownies

  1. Preheat the oven to 325 F. Grease an 8×11 glass baking dish Set aside.
  2. In a medium bowl, sift together the sugar, cocoa powder, and salt. Whisk until combined.
  3. Pour the butter into the sugar mixtures, whisking constantly. Add the vanilla extract and the eggs, one at a time, whisking after each addition.
  4. Add the flour and whisk just until combined.
  5. Stir in the chocolate chips.
  6. Transfer the batter to the prepared baking dish. Use a spatula to spread the batter into the dish and smooth the top.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center of the brownie comes out clean.
  8. Transfer the baking dish with the brownies to a wire cooling rack to cool completely.
  9. Cut brownies into shapes using the Mickey shaped cookie cutter. Place cut out brownies on a piece of wax paper.

Assembly

  1. Place Nutella in a microwave safe bowl. Heat in the microwave for 30 seconds, until it’s loose and easy to stir.
  2. Transfer warmed Nutella to a piping bag and pipe the Nutella in lines across the tops of the brownies.
  3. Sprinkle the tops of the brownies with sprinkles.
