Happy Friday! It’s a been a few weeks since my last post but I’m excited to be back! I’ve spent the last few weeks recovering from various illnesses and honestly feeling a bit demoralized after feeling sick for so long. So this week I wanted to make something quick and easy that would boost my spirits. These Chocolate Mickey Waffles (for morale) did the job perfectly! These rich and chocolatey waffles pair perfectly with fresh bananas, strawberries, and Nutella!

To make these waffles, whisk together the flour, baking powder, salt, sugar, and cocoa powder in a medium bowl. Add the egg, buttermilk, and vanilla and beat until smooth. If you don’t have fresh buttermilk, you can substitute buttermilk powder and water.

If using buttermilk powder, you’ll mix the powder into the dry ingredients and then add water with the rest of the wet ingredients. I was actually out of fresh buttermilk so I used King Arthur Buttermilk Powder.

Finally, stir in the melted butter and mix until combined.

Heat your waffle maker and give it a quick spray with cooking spray. I used my favorite Mickey Mouse Double Waffle Maker but you can use any kind of waffle maker you’d like. They now even make a Mickey and Minnie Mouse Waffle Maker, which I would love! Add the batter to the waffle maker and cook according to waffle maker instructions. 

When the waffles are ready, serve with Nutella, fresh fruit, syrup, or other desired toppings. I think of waffles as an anytime food, but if you’re looking for a fun dessert, you can also add a couple scoops of your favorite ice cream for a fun waffle sundae!
