Happy Friday! On April 12, 1992, Disneyland Paris opened and so this year it is celebrating its 30th anniversary! Disneyland Paris is the only international Disney Park I’ve been to and so to celebrate (and enjoy a taste of Paris at home), I made these copycat Celebration Mickey Sandwiches! Just like the ones Disneyland Paris is serving for its anniversary, these homemade Mickey pretzel buns are filled with French style ham, Swiss cheese slices, and Laughing Cow spreadable cheese!

Many years ago, I had a wonderful time visiting Disneyland Paris. This week, I knew I wanted to make something to celebrate their 30th anniversary. One of my favorite French sandwiches is a Jambon-Beurre, which is a baguette with sliced ham and butter. When I saw that Disneyland Paris made a special version of this sandwich as part of their anniversary celebration, I knew I had to recreate it at home!

At Disneyland Paris, the Celebration Mickey Sandwiches are large Mickey shaped pretzel buns, with sliced ham, Leerdammer, and The Laughing Cow Cheese. To recreate it at home, I made repurposed my Mickey Pretzel recipe to make homemade pretzel buns, and added sliced French style ham, Swiss cheese slices, and The Laughing Cow spreadable cheese.

To make the pretzel buns, start by combining the warm water, salt, and sugar in large bowl. Sprinkle the yeast on top and let rest for 5 minutes.

Add the flour and the vegetable oil and mix together using a spatula until a dough starts to form. Use your hands to knead the dough until it’s smooth. If needed, added a little more warm water. Transfer the dough to a greased bowl, cover with plastic wrap and let rest for 1 hour.

While the oven is preheating, combine the baking soda and water in a large pot and bring to a boil. Place the dough on a lightly greased surface. Roll the dough to about 1/2 inch thickness. Cut the dough into Mickey shapes using a large Mickey Mouse cookie cutter. I used a cookie cutter that I got at Disney World. I’ve sometimes found it available on Amazon, but there are some other options available too.

Place the cut out dough on a baking sheet lined with parchment paper. Using a flat spatula, drop the pretzels, one or two at a time, into the boiling water. Boil each side for 30 seconds. Transfer the boiled pretzels back to the baking sheet.

Using a pastry brush, brush the boiled pretzels with the egg wash. This will make the tops shiny. Bake the pretzels for 10-15 minutes or until they’re golden brown. Transfer to a wire rack to cool completely.

To assemble the sandwiches, slice the Mickey shaped buns in two using a serrated knife. Spread The Laughing Cow cheese onto each of the slices. Add a couple slices of ham and swiss cheese.

Celebration Mickey Sandwiches

Celebrate Disneyland Paris’ 30th anniversary with these Celebration Mickey Sandwiches! Just like the ones at Disneyland Paris, these Mickey shaped pretzel buns are filled with sliced ham and cheese!

Ingredients

Pretzel Buns

  • 1 ½ cup warm water (100-110 F)
  • 1 tablespoon salt
  • 1 tablespoon granulated sugar
  • 1 packet active dry yeast
  • 4 ½ cups all-purpose flour
  • 2 tablespoons vegetable oil
  • cup baking soda
  • 10 cups water
  • 1 large egg, beaten

Sandwich Filling

  • ½ lb ham
  • ¼ lb Swiss cheese slices
  • The Laughing Cow spreadable cheese

Instructions

Pretzel Buns

  1. In a large bowl, mix the warm water, salt, and sugar until combined. Sprinkle the yeast on top and rest for 5 minutes, or until the yeast starts to foam.
  2. Add the flour and vegetable oil and mix together using a spatula until a dough starts to form. Use your hands to knead the dough until it is smooth.
  3. Transfer dough to a greased bowl, cover with plastic wrap, and let rest for 1 hour.
  4. Preheat the oven to 450 F. Line a baking sheet with parchment paper. Lightly grease the parchment paper with vegetable oil.
  5. Add the baking soda and 10 cups of water to a large pot or high sided saute pan and bring to a rolling boil.
  6. Place dough onto a lightly greased working space. Roll the dough to about ½ inch thickness. Cut into Mickey shapes using a large Mickey Mouse cookie cutter. Either reroll the dough to make additional large Mickey shapes or use a smaller cookie cutter or knife to cut out pretzel bites.
  7. Place the cut out dough on the prepared baking sheet.
  8. Using a flat spaulta, drop the pretzels, one or two at a time, into the boiling water. Boil each side for 30 seconds. Transfer boiled pretzels back to the baking sheet.
  9. Using a pastry brush, brush boiled pretzels with the beaten egg. This will make the tops shiny.
  10. Bake for 10-15 minutes or until the pretzels are golden brown.
  11. Transfer the pretzels to wire racks to cool.

Assembly

  1. Slice the pretzel buns in two using a serrated knife.
  2. Spread The Laughing Cow spreadable cheese onto each of the slices.
  3. Add a couple slices of the ham and swiss cheese.
