Happy Friday! I was travelling in New England last weekend and came across a fun ice cream float at one of the local ice cream shops. Instead of soda, it used apple cider! Apple cider is one of my favorite things and so I took this idea back home with me. So, this week, I’m excited to share these Apple Cider Floats! These floats are made with maple ice cream, fresh apple cider, and a touch of maple sprinkles! They also feature a sneak peek at next week’s bake : )

To make these floats, you’ll just need apple cider and ice cream. In New England, the floats were made with a pure maple ice cream. While places do make that, it was a little harder to find where I live. It was easier to find maple ice cream in combination with other flavors (ex: maple walnut) and that works just as well! I ended up using Jeni’s Maple Soaked Pancakes ice cream. I loved that she uses pure Vermont maple syrup and it tasted great with the cider. If you can’t find (or don’t really like) maple ice cream, you can also use vanilla!

For the cider, any brand will work! Just make sure it’s not the filtered sparkling kind (though a hard cider float might also be good!). I used Ziegler’s Apple Cider as it’s local to me and one of my favorites.

Apple Cider Floats

To make the float, simply place a few scoops of ice cream in a tall glass. Then, fill the glass with apple cider. I also added a little extra maple flavor with some maple sprinkles I picked up on my travels, but you could also add a drizzle of maple syrup! Of course I also added a little touch of Mickey. Ingredients

  • 1 pint maple ice cream (can also use vanilla)
  • 16 ounces apple cider
  • maple syrup or maple sprinkles, for garnish

Instructions

  1. Place 2-3 scoops of ice cream into a tall glass. Repeat with a second glass.

  2. Fill each glass with apple cider.

  3. If desired, add a drizzle of maple syrup or a handful of maple sprinkles to the top of each float.
