Pooh's Easter Honey Pots

Pooh's Easter Hunny Pots are honey cake with honey cream cheese frosting, and chocolate eggs! Just make sure to eat them before Pooh does!

Ingredients

Honey Cake

  • ¼ cup unsalted butter, room temperature
  • 6 tablespoons granulated sugar
  • 1 large egg
  • ¾ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup milk
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract

Honey Cream Cheese Frosting

  • 4 oz cream cheese, room temperature
  • 2 tablespoons unsalted butter, room temperature
  • 2 ½ tablespoons honey
  • 1 ½ cups powdered sugar
  • green gel food coloring
  • black gel food coloring

Decorations

  • Robin’s Eggs Candies (full size and mini size)

Instructions

Honey Cakes

  1. Preheat oven to 350 degrees. Spray cake mold with cooking spray.
  2. In a small bowl, combine flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar. Add egg and mix until just combined.
  4. In a small bowl, combine milk, honey, vanilla, and lemon juice.
  5. Add half of the flour mixture to the butter mixture, beating until just combined. Add in the milk mixture, then add the remaining flour mixture, mixing until just combined.
  6. Fill cake mold ⅔ of the way full. Bake for 20-25 minutes, or until a toothpick inserted in center comes out clean. Transfer to a wire rack to cool completely before frosting.

Honey Cream Cheese Frosting

  1. Beat the cream cheese, butter, and honey until creamy. Gradually add in the powdered sugar, mixing until combined.
  2. Take a couple spoonfuls of frosting and place in a separate bowl. Add a few drops of black gel food coloring, stirring until fully combined.
  3. In the larger bowl, add a few drops of green gel food coloring and stir until fully combined.
  4. Transfer the black frosting to a tip-less piping bag and the green frosting to a piping bag fitted with a grass piping tip. Place in the refrigerator to chill while the cakes cool.

Assembly

  1. Use the black frosting to pipe the “Hunny” lettering on the sides of the pots.
  2. Pipe swirls of green grass on the tops of the cakes using the green frosting.
  3. Add a few egg shaped chocolate candies to the tops of the frosting grass.
