Mickey Ice Cream Sandwiches

Start the summer off right with these Mickey Ice Cream Sandwiches! Just add your favorite ice cream to these chocolate cookies for an easy summer treat!

Ingredients

Chocolate Cookies

  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract

Filling

  • 2 pints ice cream, any flavor

Equipment

  • large Mickey Mouse cookie cutter

Instructions

Chocolate Cookies

  1. In a medium bowl, whisk together the cocoa powder, salt, baking powder, and flour. Set aside.
  2. In a large bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the eggs and vanilla and beat until combined, about 30 seconds.
  4. On low speed, gradually add the flour mixture, beating until just combined.
  5. Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and place in the refrigerator to chill until firm, about 2 hours.
  6. Preheat the oven to 350 F. Line two baking sheets with parchment paper.
  7. Remove one dough disk from the refrigerator and let soften at room temperature, about 5 minutes.
  8. On a lightly floured surface, roll the dough out to about ¼ inch thickness.
  9. Cut into shapes using a large Mickey Mouse shaped cookie cutter.
  10. Place cut out cookies onto one of the prepared baking sheets and then chill in the refrigerator for 15 minutes.

  11. Prick the cookies in a few places with a fork.

  12. Repeat these steps with the second dough disk.

  13. Bake the cookies for 12-15 minutes, until the edges are firm. Let the cookies cool on the baking sheets.

Assembly

  1. Let the ice cream rest at room temperature until slightly softened.
  2. Flip one of the Mickey cookies over so that the bottom of the cookie is facing up.
  3. Scoop the ice cream onto the cookie, using an offset spatula to smooth the ice cream around if needed.
  4. Place a second cookie, right side up, on top of the ice cream and gently press together.
  5. Enjoy the ice cream sandwiches immediately or cover them with plastic wrap and place them in the freezer to enjoy later.
