Preheat oven to 375 F. Line baking sheets with parchment paper.

In a medium bowl, combine flour, cream of tartar, baking soda, and salt. Set aside.

In a large bowl, beat butter and sugar together.

Add in the eggs, one at time, beating well after each addition.

Add in the vanilla extract and mix until combined.

Gradually add the flour mixture into the butter mixture, mixing until completely combined.

In a small bowl, combine the cinnamon and sugar.

Roll a tablespoon sized amount of dough into a ball and then roll the ball in the cinnamon sugar, making sure all sides are covered.

Place the covered dough balls onto prepared baking sheets, about two inches apart.

Bake for 8-10 minutes, until the bottoms of the cookies are browned and the edges are baked.

Cool for 2-3 minutes on the baking sheet before transferring to wire rack to cool completely.
