Happy Friday! One of the tastiest things I ate at Disneyland last month was the Bananas Foster French Toast from Storytellers Cafe. French Toast is already one of my favorite breakfast foods and the caramel banana sauce was the perfect addition! Inspired by the delicious meal I had at Storytellers, I’m excited to share this recipe for Bananas Foster French Toast!

On the last day of my trip to Disneyland, I went to Mickey’s Tales of Adventure Character Breakfast at Storytellers Cafe at the Grand Californian Hotel. I had a wonderful time hanging out with Mickey, Minnie, Chip & Dale, and Pluto and enjoying a delicious breakfast spread! There were so many great options but the standout for me was the Bananas Foster French Toast. I loved the combination of cinnamon spiced french toast, caramel banana sauce, and caramelized bananas so much that I took that inspiration to make my own version at home!

There are three parts to this recipe, the french toast batter, the banana caramel sauce, and the caramelized banana topping. Start by making the caramel banana sauce so that it’s ready to go when the french toast is finished cooking.

To make the sauce, combine the sugar and water in a large saucepan over medium heat. Stir the mixture together until the sugar has dissolved. Then, cook the mixture until it reaches 235 F-240 F. It’s helpful to use an instant read thermometer to monitor the temperature.

Reduce the heat to low and whisk in the butter, a couple tablespoons at a time. Add the banana and salt. Bring the mixture to a simmer and then transfer to a blender. Add in the rum extract and blend until smooth. Set the sauce aside until ready to assemble the french toast. Store any leftover sauce in an airtight container in the refrigerator.

Next, make the french toast batter by whisking together the eggs, milk, sugar, and spices in a large bowl. Heat a nonstick frying pan or griddle over medium heat. Add the slices of challah bread, ensuring that each slice is fully covered and soaked in the batter. Place a a tablespoon of butter in the frying pan or griddle and then add the slices of challah. Cook the slices, flipping occasionally, until they’re golden brown on both sides. Repeat the process with the additional slices of bread as needed.

While the french toast is cooking, roll slices of banana in granulated sugar. Spray a small nonstick pan with cooking spray and heat over medium heat. Place the banana slices in the pan and cook for 2-3 minutes until the bottom is caramelized. Flip the slice and cook for another 1-2 minutes.

To assemble the french toast, place 2 slices of french toast on a plate. Drizzle with the caramel banana sauce (if needed, reheat the sauce in a pan or microwave). Place 2-3 slices of caramelized banana on top.

Ingredients

Caramel Banana Sauce

  • 2-3 bananas
  • 1 ¼ cup unsalted butter, room temperature
  • 2 cups light brown sugar
  • ½ teaspoon rum extract
  • 2 ounces water
  • ¾ teaspoon kosher salt

French Toast

  • ½ loaf challah bread, sliced into 1-inch pieces
  • 2 large eggs
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/8 teaspoon cloves
  • ½ teaspoon allspice
  • ¼ teaspoon ground nutmeg

Caramelized Bananas

  • 2 bananas
  • 4-6 tablespoons granulated sugar
  • cooking spray

Instructions

Caramel Banana Sauce

  1. In a large saucepan, combine the sugar and water over medium heat. Stir the mixture until the sugar has dissolved then cook until the mixture reaches 235 F-240 F.
  2. Reduce the heat to low and whisk in the butter, a couple tablespoons at a time.
  3. Add the bananas and salt and bring the mixture to a simmer.
  4. Transfer the sauce to a blender. Add the rum extract and blend until smooth.
  5. Set aside until ready to assemble the french toast. Store any leftover sauce in an airtight container in the refrigerator.

French Toast

  1. Heat a large nonstick frying pan or griddle over medium heat. Grease with butter.
  2. In a large bowl, whisk together the eggs, milk, sugar, and spices.
  3. Add the bread slices, ensuring that each slice is fully covered and soaked in the batter.
  4. Cook the bread slices, flipping occasionally, until they’re golden brown on both sides. Repeat as needed until all slices are cooked.

Caramelized Bananas

  1. While the french toast is cooking, spray a small nonstick frying pan with cooking spray and heat over medium heat.
  2. Roll the banana slices in the granulated sugar and place them in the pan.
  3. Cook for 2-3 minutes, until they’re caramelized on one side. Flip and cook for an additional 1-2 minutes.

Assembly

  1. Place two slices of french toast on a plate and drizzle with caramel banana sauce.
  2. Add a few slices of caramelized bananas.
